  • 1 lb boneless skinless chicken thighs
  • 1 cup long-grain brown rice
  • 1 red bell pepper, sliced
  • 2 green onions, chopped
  • 2 tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix garlic powder, cumin, smoked paprika, lime juice, salt, and pepper. Coat the chicken thighs and refrigerate for at least 30 minutes.
  2. Rinse brown rice until clear. Combine with water (1 cup rice to 2 cups water) in a pot. Bring to a boil, then cover and simmer on low for about 45 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Sear marinated chicken for 5-7 minutes per side until golden brown.
  4. Sauté sliced red bell peppers in residual oil for 3-4 minutes until slightly softened.
  5. Fluff cooked rice and layer it with sliced chicken and sautéed peppers. Garnish with chopped green onions and an extra squeeze of lime.
