  • 2 lbs pork shoulder, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup bell peppers (mixed colors), sliced
  • 1 medium onion, chopped
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup light brown sugar
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp rice vinegar

Instructions

  1. Trim excess fat from the pork shoulder and cut it into bite-sized pieces. Chop bell peppers and onion.
  2. In a bowl, mix soy sauce, brown sugar, garlic, ginger, and rice vinegar to create the sauce.
  3. Layer pork at the bottom of the slow cooker; add onions and bell peppers on top.
  4. Pour the sauce over the layered ingredients.
