- 8 oz mascarpone cheese
- 1 cup heavy whipping cream

- 1 tsp peppermint extract
- ¼ cup crushed candy canes
- ¼ cup chocolate shavings
Instructions
- Prepare an 8×8 inch baking dish by lining it with parchment paper.
- Crush chocolate cookies into fine crumbs and mix with melted butter until a wet sand-like consistency forms. Press this mixture into the bottom of the prepared dish.
- In a bowl, beat mascarpone cheese, sugar, and peppermint extract together until smooth. In another bowl, whip heavy cream to soft peaks, then fold it into the mascarpone mixture until combined.
- Spread half of the cream mixture over the cookie base. Add another layer of crushed cookies on top, followed by the remaining cream mixture. Smooth it out evenly.
- Cover with plastic wrap and refrigerate for at least four hours or overnight to set.
- Once set, remove from the dish using parchment paper and top with crushed candy canes and chocolate shavings before slicing to serve.
