  • 1 ½ cups crushed chocolate cookies
  • ½ cup unsalted butter, melted
  • 8 oz mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup granulated sugar (adjust to taste)
  • 1 tsp peppermint extract
  • ¼ cup crushed candy canes
  • ¼ cup chocolate shavings

Instructions

  1. Prepare an 8×8 inch baking dish by lining it with parchment paper.
  2. Crush chocolate cookies into fine crumbs and mix with melted butter until a wet sand-like consistency forms. Press this mixture into the bottom of the prepared dish.
  3. In a bowl, beat mascarpone cheese, sugar, and peppermint extract together until smooth. In another bowl, whip heavy cream to soft peaks, then fold it into the mascarpone mixture until combined.
  4. Spread half of the cream mixture over the cookie base. Add another layer of crushed cookies on top, followed by the remaining cream mixture. Smooth it out evenly.
  5. Cover with plastic wrap and refrigerate for at least four hours or overnight to set.
  6. Once set, remove from the dish using parchment paper and top with crushed candy canes and chocolate shavings before slicing to serve.
