Ingredients

Scale
  • 1 cup fresh cherries, pitted and halved
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a large bowl, beat eggs and granulated sugar until thick and pale. Gradually mix in flour and baking powder, then stir in vanilla extract.
  3. Spread the batter evenly in the prepared pan and bake for 15-20 minutes until lightly golden brown. Allow it to cool slightly before removing from the pan.
  4. For the cheesecake filling, beat cream cheese until smooth, then gradually add powdered sugar. Fold in whipped cream until well combined.
  5. Once the cake has cooled completely, flip it over onto a clean kitchen towel, remove parchment paper, and spread cheesecake filling evenly over the top. Roll up tightly using the towel for support.
  6. Wrap the rolled cake in plastic wrap and refrigerate for at least one hour before serving.
