Ingredients

Scale
  • 1 cup fresh strawberries, diced
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 slices thick bread (brioche or Texas toast)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Oil for frying (vegetable or canola)

Instructions

  1. In a mixing bowl, combine softened cream cheese, sugar, vanilla extract, and diced strawberries until smooth.
  2. Spread the cream cheese mixture generously between two slices of bread to form sandwiches; press lightly to seal.
  3. Set up a breading station with beaten eggs and panko breadcrumbs. Dip each sandwich in the egg mixture and then coat with breadcrumbs.
  4. Heat oil in a skillet over medium heat (around 350°F). Once hot, fry each sandwich for 2-3 minutes per side until golden brown.
  5. Remove from oil and drain on paper towels. Serve warm, optionally dusted with powdered sugar.
