Instructions

  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a separate large bowl, beat softened butter with granulated and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Fold in pumpkin puree.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Drop mounds of dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes or until edges are lightly golden.
