- 2-inch piece ginger, grated
- 3–4 green chilies, slit lengthwise
- 2 tbsp coriander powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 can (400 ml) coconut milk
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat. Sauté onions until golden brown (about 7 minutes).
- Add minced garlic, grated ginger, and green chilies; cook for another 3 minutes.
- Stir in coriander, cumin, turmeric, and red chili powder; toast for 2 minutes.
- Add cubed beef; stir to coat with spices and brown on all sides (about 10 minutes).
- Pour in coconut milk and one cup of water; bring to a boil. Reduce heat and simmer gently for about 2 hours until beef is tender.
- Adjust seasoning if needed and garnish with fresh cilantro before serving.
