  • 1 head garlic
  • 4 slices day-old sourdough bread, cubed
  • 3 tablespoons extra virgin olive oil (divided)
  • Salt and freshly ground black pepper to taste
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the top off the head of garlic, drizzle with 1 tablespoon olive oil, wrap in foil, and place on the baking sheet.
  3. In a bowl, toss the green beans with 2 tablespoons olive oil, salt, pepper, and lemon zest. Spread on the baking sheet.
  4. Roast for 20-25 minutes until garlic is caramelized and green beans are tender-crisp.
  5. While roasting, heat olive oil in a skillet over medium heat. Fry sourdough cubes until golden brown (about 5-7 minutes).
