- 12 jumbo pasta shells
- 2 cups fresh spinach
- 1 cup cremini mushrooms (diced)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 2 tsp extra virgin olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Cook pasta shells according to package instructions until al dente; drain and set aside.
- In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, sautéing for 5-7 minutes until tender. Stir in spinach until wilted.
- In a bowl, combine ricotta, half of the mozzarella, sautéed vegetables, Italian seasoning, salt, and pepper.
- Stuff each shell with the filling and place them seam-side up in a greased baking dish. Cover with marinara sauce and top with remaining mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until bubbly.
