  • 2 large eggs
  • 1/2 cup crumbled feta cheese

  • 2 tbsp lemon juice
  • 1/2 cup sour cream or Greek yogurt
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine grated zucchini, flour, eggs, feta cheese, fresh herbs, and lemon juice. Mix until well combined.
  3. Heat olive oil in a nonstick skillet over medium heat.
  4. Drop spoonfuls of the mixture into the skillet and flatten slightly. Cook for 3-4 minutes on each side until golden brown.
  5. In a small bowl, mix sour cream or Greek yogurt with lemon zest and additional lemon juice. Season with salt and pepper.
