  • 1 whole chicken (45 pounds)
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 4 garlic cloves, minced
  • 1.5 pounds Yukon Gold or red potatoes, quartered
  • Juice of 1 lemon
  • 2 tsp kosher salt
  • 1 tsp black pepper

Instructions

  1. Preheat the oven to 450°F (230°C). Remove the backbone from the chicken using kitchen shears and flatten it by pressing down on the breastbone.
  2. Drizzle olive oil over the chicken and season with salt, pepper, garlic, and herbs. Squeeze lemon juice over it.
  3. Toss quartered potatoes in a bowl with olive oil, salt, and pepper until well-coated.
  4. Place the chicken on a baking sheet and scatter the seasoned potatoes around it.
  5. Roast for 45-55 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown. Let rest for 10 minutes before serving.
