- 2 tbsp extra virgin olive oil
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- 4 garlic cloves, minced
- 1.5 pounds Yukon Gold or red potatoes, quartered
- Juice of 1 lemon
- 2 tsp kosher salt
- 1 tsp black pepper
Instructions
- Preheat the oven to 450°F (230°C). Remove the backbone from the chicken using kitchen shears and flatten it by pressing down on the breastbone.
- Drizzle olive oil over the chicken and season with salt, pepper, garlic, and herbs. Squeeze lemon juice over it.
