  • 2 sheets frozen puff pastry (thawed)
  • 2 cups fresh spinach
  • 1 cup finely chopped mushrooms
  • 2 tbsp Dijon mustard (plus extra for seasoning)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 tbsp fresh thyme (chopped)
  • 1 tbsp fresh parsley (chopped)
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté chopped mushrooms and spinach until soft. Season with salt, pepper, and thyme; set aside to cool.
  3. Season chicken breasts with salt and pepper, then spread a thin layer of Dijon mustard on each piece.
  4. Roll out puff pastry on a floured surface; place one chicken breast in the center of each sheet topped with the mushroom-spinach mixture. Fold pastry over to seal tightly.
  5. Place seam-side down on the baking sheet; brush with beaten egg for shine.
  6. Bake for 25-30 minutes until golden brown.
  7. For the sauce, combine heavy cream and chicken broth in a saucepan over medium heat until thickened; stir in additional Dijon mustard and fresh herbs.
