Ingredients

Scale
  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (parsley or chives), for garnish

Instructions

  1. Wash and peel the Yukon Gold potatoes (if desired), then cut them into halves or quarters for even cooking.
  2. In a large pot, cover the cut potatoes with cold salted water. Bring to a boil over medium-high heat and cook until fork-tender, about 15-20 minutes.
  3. While the potatoes are cooking, melt the butter in a skillet over medium heat. Add minced garlic and sauté until fragrant but not browned.
  4. Drain the cooked potatoes and transfer them to a baking sheet lined with parchment paper. Gently smash each potato using a potato masher or fork until flattened but intact.
  5. Drizzle the melted garlic butter over the smashed potatoes and sprinkle generously with salt, pepper, and grated Parmesan cheese.
  6. Preheat your oven to 425°F (220°C) and bake for approximately 25-30 minutes until golden brown and crispy on the edges. Serve warm, garnished with fresh herbs.
