  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ small red onion, thinly sliced
  • 1 ripe avocado, cubed
  • Juice of 1 lime

Instructions

  1. Rinse quinoa under cold water until clear. In a saucepan, combine quinoa with 2 cups water or vegetable broth. Bring to a boil, cover, reduce heat to low, and simmer for about 15 minutes until liquid is absorbed.
  2. While quinoa cooks, chop cucumber and halve cherry tomatoes. Finely slice red onion and set aside.
  3. In a large mixing bowl, combine black beans and chopped vegetables.
  4. Once the quinoa is cooked and slightly cooled, add it to the bowl and mix well.
  5. Gently fold in avocado cubes and lime juice for added creaminess and zest.
  6. Serve in bowls with extra lime wedges if desired.
