  • 2 medium tomatoes, diced

  • 1 ripe avocado, mashed
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Preheat grill to medium-high heat. Grill nopales for 3-4 minutes per side until tender with grill marks. Set aside to cool.
  2. While cooling, chop tomatoes, red onion, and cilantro.
  3. In a bowl, mash avocado with lime juice until smooth but still chunky.
  4. In a large bowl, combine grilled nopales with tomatoes, onion, cilantro, and mashed avocado. Drizzle olive oil over the top and mix gently.
