  • 2 cups marinara sauce (homemade or store-bought)
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 egg (optional for added richness)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, warm olive oil and sauté sliced mushrooms and zucchini until softened. Add spinach until wilted; season with salt, pepper, basil, and oregano.
  3. In a bowl, mix cottage cheese with one egg (if using) until well combined.
  4. Spread a layer of marinara sauce in a baking dish. Layer with lasagna noodles, half the cottage cheese mixture, sautéed vegetables, and more marinara sauce. Repeat layers, finishing with noodles topped with marinara.
  5. Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden.
