- 3 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil

Instructions
- Preheat oven to 400°F (200°C). Roast the wrapped beets on a baking sheet for about 45 minutes or until fork-tender. Let cool, peel, and slice into wedges.
- Toss halved Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden brown.
- In a large serving bowl, combine mixed greens, roasted beets, and Brussels sprouts. Top with toasted walnuts and crumbled feta cheese.
- Whisk together balsamic vinegar and olive oil, then drizzle over the salad just before serving.
