  • 1 lb Brussels sprouts, trimmed and halved
  • 2 medium-sized beets, washed and wrapped in foil
  • 4 cups mixed greens (baby spinach, arugula, or kale)
  • 1/2 cup walnuts, toasted
  • 1/2 cup feta cheese, crumbled (or goat cheese)
  • 3 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Roast the wrapped beets on a baking sheet for about 45 minutes or until fork-tender. Let cool, peel, and slice into wedges.
  2. Toss halved Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden brown.
  3. In a large serving bowl, combine mixed greens, roasted beets, and Brussels sprouts. Top with toasted walnuts and crumbled feta cheese.
  4. Whisk together balsamic vinegar and olive oil, then drizzle over the salad just before serving.
