  • 1 lb (450g) chicken breast, chopped into bite-sized pieces
  • 1 can (13.5 oz or 400ml) coconut milk
  • 3 tbsp Thai red curry paste
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 2 cups fresh spinach leaves
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare your ingredients by chopping the chicken and slicing the vegetables.
  2. Add the chopped chicken to the bottom of the crockpot, followed by the sliced bell peppers and carrots.
  3. In a separate bowl, whisk together coconut milk, Thai red curry paste, lime juice, salt, and pepper until fully combined. Pour this mixture over the chicken and vegetables in the crockpot.
  4. Cook on low heat for 6-8 hours or high heat for 3-4 hours until the chicken is tender.
  5. About 30 minutes before serving, stir in fresh spinach leaves until wilted.
  6. Serve hot, garnished with fresh cilantro.
