  • 1 lb corned beef, diced
  • 2 cups sauerkraut, rinsed and drained
  • 2 cups shredded Swiss cheese
  • 4 cups stale rye bread, cubed
  • ½ cup Thousand Island dressing
  • ¼ cup butter, melted
  • 1 tsp poppy seeds (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine cubed rye bread with melted butter until evenly coated.
  3. Layer half of the bread mixture in the baking dish. Top with half of the corned beef, sauerkraut, and Swiss cheese. Repeat layers and finish with Swiss cheese on top.
  4. Drizzle Thousand Island dressing over the casserole.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
