- 2 medium carrots (about 8 oz), peeled and thinly sliced
- 2 medium parsnips (about 8 oz), peeled and thinly sliced
- 1 cup heavy cream
- 1 cup sharp cheddar cheese, grated
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 2 tbsp unsalted butter, melted
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Layer half of the sliced potatoes, carrots, and parsnips in the baking dish. In a bowl, mix heavy cream with minced garlic, salt, and pepper; pour half over the vegetables. Repeat layering with remaining vegetables and cream.
- Top with grated cheddar cheese followed by panko breadcrumbs mixed with melted butter.
- Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown. Serve warm.
