  • 4 (6 oz) fresh white fish fillets (cod, haddock, or tilapia)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted Kalamata olives
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. In a large bowl, combine cherry tomatoes, olives, olive oil, garlic, salt, and pepper. Mix until well coated.
  3. Place fish fillets in the baking dish; drizzle with lemon juice and season with salt and pepper.
