- 1 cup bell peppers (red, yellow, green), sliced
- 1 cup broccoli florets
- 1 cup carrots, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup low-sodium soy sauce
- 1 tbsp honey
- 1 tsp sesame oil
- 2 cups cooked brown rice
Instructions
- Heat 1 tbsp olive oil in a skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove and set aside.
- In the same skillet, add remaining olive oil and sauté minced garlic, bell peppers, broccoli, and carrots for 5-6 minutes until tender but crisp.
- In a small bowl, mix soy sauce, honey, and sesame oil; pour over sautéed vegetables. Simmer for another couple of minutes.
- Return chicken to the skillet; stir well to combine all ingredients and heat through for about 1 minute.
- Serve hot over cooked brown rice.
