  • 45 lbs bone-in lamb shoulder
  • 10 whole garlic cloves
  • 1/2 cup honey mustard
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, combine honey mustard, minced garlic, rosemary, thyme, salt, and pepper. Rub this mixture generously over the lamb shoulder and let it marinate for at least 1 hour or overnight in the refrigerator.
