Ingredients
- 4–5 lbs bone-in lamb shoulder
- 10 whole garlic cloves
- 1/2 cup honey mustard
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, combine honey mustard, minced garlic, rosemary, thyme, salt, and pepper. Rub this mixture generously over the lamb shoulder and let it marinate for at least 1 hour or overnight in the refrigerator.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the marinated lamb on all sides until browned.
- Transfer the skillet to the oven and roast uncovered for approximately 4 hours or until fork-tender, basting occasionally with pan juices.
- Remove from the oven and let rest for 20 minutes before carving. Serve with pan juices drizzled over the top.
