  • 1 medium zucchini, diced
  • 2 medium sweet potatoes, cubed (about 2 cups)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling the sweet potatoes, then cutting them into small cubes. Dice the zucchini and onion, and mince the garlic.
  2. In a large skillet over medium heat, add olive oil. Once hot, cook the ground beef until browned, breaking it apart with a spatula (5-7 minutes). Season with salt and pepper.
  3. Stir in the onion and garlic; cook until the onion is translucent (3-4 minutes).
  4. Add sweet potato cubes; mix well and cover. Cook for about 10 minutes or until fork-tender.
  5. Remove the lid and add zucchini; stir together and cook uncovered for an additional 5 minutes until tender.
