Ingredients

Scale
  • 2 lbs Russet potatoes, peeled and chopped
  • 1 cup heavy cream
  • ½ cup unsalted butter
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ¼ cup fresh parsley or basil, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the Potatoes: Place the chopped russet potatoes in a large pot of cold salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.
  2. Mash: Return drained potatoes to the pot and let steam escape for a minute. Mash until smooth using a potato masher or ricer.
  3. Add Cream and Butter: In a saucepan over low heat, melt heavy cream and butter together. Pour into the mashed potatoes along with minced garlic. Stir until creamy.
  4. Mix in Cheese and Herbs: Fold in grated Parmesan cheese and chopped herbs. Season with salt and pepper to taste.
  5. Prepare for Storage: Transfer mashed potatoes to an oven-safe dish if making ahead. Cover tightly with plastic wrap or foil and refrigerate until ready to bake.
  6. Reheat: Preheat oven to 350°F (175°C). Remove cover from the dish and bake for about 30 minutes or until heated through.
