Instructions
- Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper.
- Sift together almond flour, cocoa powder, and confectioners’ sugar in a bowl.
- In a clean mixing bowl, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
- Gently fold the sifted dry mixture into the whipped egg whites until just combined.
- Transfer batter to a piping bag fitted with a round tip; pipe 1-inch circles on baking sheets.
- Let macarons rest at room temperature for about 30 minutes until they form a skin.
- Bake for 15-18 minutes; let cool completely before removing from sheets.
- For the ganache, heat heavy cream and pour over chopped dark chocolate; stir until smooth and let cool until firm.
- Pipe ganache onto half of the macaron shells and sandwich them with the remaining halves.
