  • 1 lb large shrimp, peeled and deveined
  • 2 tsp Sichuan peppercorns
  • 3 cloves garlic, minced
  • 4 green onions, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup cornstarch
  • 1/2 cup vegetable oil (for frying)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp lemon juice

Instructions

  1. Prepare the shrimp by rinsing and patting dry.
  2. Marinate shrimp with salt, black pepper, minced garlic, and Sichuan peppercorns for 15-20 minutes.
  3. Toss marinated shrimp in cornstarch until well-coated.
  4. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  5. Fry coated shrimp in batches for 2-3 minutes on each side until golden brown.
  6. Drain on paper towels, then sauté green onions briefly in the same pan before adding fried shrimp back to toss together.
  7. Drizzle with lemon juice before serving.
