- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tbsp lime juice
- Salt & pepper to taste
Instructions
- Cook the pasta in boiling salted water until al dente, about 8-10 minutes. Drain and rinse under cold water.
- While the pasta cooks, prepare the vegetables: dice the bell pepper, slice the green onions, and chop cilantro. If using fresh corn, grill until charred and cut off kernels.
- In a bowl, whisk together mayonnaise, sour cream, lime juice, salt, and pepper until smooth.
- Combine cooled pasta with vegetables in a large bowl. Pour dressing over and toss gently until well coated.
