  • 4 medium sweet potatoes
  • 8 oz fresh button or cremini mushrooms, sliced
  • 2 cups fresh spinach, washed
  • 3 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes under cold water and pat dry.
  2. Place the sweet potatoes on a baking sheet lined with parchment paper and bake for 45-60 minutes until fork-tender.
  3. In a large skillet over medium heat, add olive oil. Once hot, sauté minced garlic until fragrant, then add sliced mushrooms and cook until browned. Add spinach and cook until wilted.
  4. Lower heat and mix in softened cream cheese. Season with salt and pepper to taste.
  5. Once baked, slice open each sweet potato lengthwise without cutting all the way through. Fluff the insides with a fork and spoon in the mushroom-spinach filling.
  6. Sprinkle shredded cheese on top of each filled sweet potato and return to the oven for an additional 10-15 minutes until melted.
