  • 1 can (20 oz) young green jackfruit in water or brine, drained and rinsed
  • 1 cup cooked lentils
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • ¼ cup maple syrup
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the jackfruit by removing seeds and cutting into smaller pieces if desired.
  2. Cook lentils according to package instructions until tender; drain excess water.
  3. In a large bowl, combine jackfruit, cooked lentils, pineapple juice, soy sauce, maple syrup, garlic powder, smoked paprika, salt, and pepper. Mix well.
  4. Shape the mixture into a ham-like form on parchment paper.
  5. Preheat oven to 375°F (190°C) and bake for about 30 minutes until heated through.
  6. Brush additional maple syrup mixture over the top in the last ten minutes of baking for extra caramelization.
