  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1 large Vidalia onion, diced
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 1 can (14 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1 tsp red chili flakes (adjust to taste)
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. Heat oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown in batches. Remove and set aside.
  2. In the same pot, sauté onions until golden brown. Add garlic and ginger; cook until fragrant.
  3. Stir in curry powder and red chili flakes; toast for one minute.
  4. Return beef to the pot along with any juices and add coconut milk. Stir well.
  5. Bring to a simmer, reduce heat to low, cover partially, and cook for about an hour until beef is tender.
