  • 24 ladyfingers
  • 1 cup strong brewed espresso or coffee
  • 8 oz mascarpone cheese (room temperature)
  • 3 large eggs (separated)
  • 1/2 cup granulated sugar (divided)
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Brew and cool the espresso. Stir in 2 tablespoons of sugar until dissolved.
  2. In a mixing bowl, beat together mascarpone cheese, egg yolks, and half of the sugar until smooth.
  3. In a separate bowl, whip the egg whites until stiff peaks form; gently fold into the mascarpone mixture.
  4. Dip each ladyfinger into the cooled coffee quickly and layer half in a dish. Spread half of the mascarpone mixture over them. Repeat with another layer of ladyfingers and mascarpone.
  5. Cover and refrigerate for at least 4 hours or overnight.
  6. Before serving, dust with cocoa powder and slice into portions.
