- 24 ladyfingers
- 1 cup strong brewed espresso or coffee
- 8 oz mascarpone cheese (room temperature)
- 3 large eggs (separated)
- 1/2 cup granulated sugar (divided)
- 2 tbsp unsweetened cocoa powder
Instructions
- Brew and cool the espresso. Stir in 2 tablespoons of sugar until dissolved.
- In a mixing bowl, beat together mascarpone cheese, egg yolks, and half of the sugar until smooth.
- In a separate bowl, whip the egg whites until stiff peaks form; gently fold into the mascarpone mixture.
- Dip each ladyfinger into the cooled coffee quickly and layer half in a dish. Spread half of the mascarpone mixture over them. Repeat with another layer of ladyfingers and mascarpone.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, dust with cocoa powder and slice into portions.
