  • 1/4 cup breadcrumbs
  • 2 green onions, finely chopped
  • 3 cloves garlic, minced
  • 1 large egg
  • 1/4 cup ketchup
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp gochujang (adjust to taste)
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha sauce (adjust to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together ground beef, breadcrumbs, green onions, minced garlic, and egg until combined.
  3. Form the mixture into small meatballs (about one inch in diameter) and place them on the prepared baking sheet.
  4. Bake for approximately 20-25 minutes or until cooked through (internal temperature should reach at least 160°F or 70°C).
  5. While baking, whisk together ketchup, soy sauce, brown sugar, and gochujang in a medium bowl.
  6. In another bowl, mix mayonnaise and sriracha until combined.
  7. Once meatballs are done baking, toss them in the sauce until well coated and serve drizzled with spicy mayo.
