  • 34 boneless, skinless chicken breasts (approximately 1 lb)
  • 6 slices thick-cut bacon
  • 9 gluten-free lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 4 cups gluten-free marinara sauce
  • Salt and pepper to taste
  • Italian herbs to taste

Instructions

  1. 1. Preheat your oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. 2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add chopped chicken seasoned with salt and pepper. Cook for about 6–8 minutes until no longer pink; shred the chicken once cooled.
  3. 3. In the same skillet, cook bacon until crispy. Remove from heat, chop into pieces, and set aside.
  4. 4. Spread a layer of marinara sauce on the bottom of the baking dish. Layer noodles over the sauce followed by half of the shredded chicken, dollops of ricotta cheese, spinach, and bacon bits. Add more marinara sauce on top.
  5. 5. Repeat layering with remaining ingredients and finish with mozzarella and Parmesan cheese.
  6. 6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until bubbly. Let cool slightly before serving.
