- 2 lbs beef chuck, cut into 1-inch cubes
- 1 can (14.9 oz) Guinness beer
- 4 medium carrots, chopped
- 2 medium onions, diced
- 4 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 4 cups beef broth
- 2 tablespoons olive oil
- 1 bouquet garni (thyme and bay leaves)
- Salt and pepper to taste
- 2 tablespoons flour for dredging (optional)
Instructions
- Prepare your ingredients by chopping beef chuck, carrots, onions, garlic, and potatoes into bite-sized pieces.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear half of the beef cubes until browned on all sides; remove from pot.
- In the same pot, sauté onions and garlic until soft. Add carrots and cook for 3–5 minutes.
- Pour in the Guinness beer and scrape any browned bits off the bottom. Stir in beef broth and add bouquet garni.
- Return the seared beef and add potatoes to the pot. Bring to a boil then reduce heat to low.
- Cover and let simmer for about 2–3 hours until beef is tender. Stir occasionally and adjust seasoning before serving.
