  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cloves
  • 1 tsp salt
  • 1 cup pumpkin puree
  • 1 cup toasted pecans, roughly chopped
  • 4 large eggs
  • 1 cup unsalted butter, softened
  • 1 cup heavy cream
  • For the Frosting: 8 oz cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease three round cake pans and line with parchment paper.
  2. In a bowl, whisk flour, baking powder, spices, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time then gradually mix in dry ingredients.
  3. In a separate bowl, combine pumpkin puree with sugar, spices, eggs, and cream until smooth.
  4. Pour half the cake batter into each of two pans; spread half the pumpkin filling over each layer. Top with remaining batter.
  5. Bake for 25–30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. For frosting, beat cream cheese and powdered sugar until creamy. Frost cooled cakes between layers and on top.
