  • 3 large yellow onions, sliced
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat a skillet over medium-high heat and sear the roast on all sides until browned.
  3. Place sliced onions in the bottom of the slow cooker.
  4. Add the seared roast on top of the onions.
  5. In a bowl, mix beef broth, Worcestershire sauce, garlic powder, paprika, black pepper, and thyme; pour over the roast.
  6. Cover and cook on low for 8 hours or high for 4-5 hours until fork-tender.
  7. Let the roast rest before slicing and serve topped with caramelized onions.
