- 1 cup ricotta cheese

- 1/2 cup grated Parmesan cheese (divided)

- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Slice eggplants into thin strips, drizzle with olive oil, sprinkle with salt, and roast for 20 minutes until soft.
- In a bowl, mix ricotta cheese, minced garlic, half of the Parmesan, chopped basil, salt, and pepper.
- Lay out roasted eggplant slices, place 2 tablespoons of the ricotta mixture on one end, roll tightly, and place seam-side down in a greased baking dish.
- Cover with marinara sauce and sprinkle remaining Parmesan on top.
- Bake for 25-30 minutes until bubbly and golden brown. Serve with additional marinara drizzled on top.
