  • 2 medium eggplants (sliced lengthwise)
  • 1 cup ricotta cheese
  • 2 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese (divided)
  • 1/4 cup fresh basil leaves (chopped)
  • 2 cups marinara sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice eggplants into thin strips, drizzle with olive oil, sprinkle with salt, and roast for 20 minutes until soft.
  2. In a bowl, mix ricotta cheese, minced garlic, half of the Parmesan, chopped basil, salt, and pepper.
  3. Lay out roasted eggplant slices, place 2 tablespoons of the ricotta mixture on one end, roll tightly, and place seam-side down in a greased baking dish.
  4. Cover with marinara sauce and sprinkle remaining Parmesan on top.
  5. Bake for 25-30 minutes until bubbly and golden brown. Serve with additional marinara drizzled on top.
