- 1 can (15 oz) low-sodium chickpeas
- 1/4 cup fresh parsley, chopped
- 3 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil

- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until clear. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork.
- While quinoa cooks, drain and rinse chickpeas. Heat 1 tbsp olive oil in a skillet over medium heat. Add chickpeas with salt and pepper; cook for 5-7 minutes until heated through.
- In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper.
- In a large bowl, combine cooked quinoa, sautéed chickpeas, parsley, and dressing; toss gently.
- Serve warm or at room temperature; garnish with extra parsley or lemon zest if desired.
