A fast and flavorful stir fry featuring a rich balsamic reduction that coats crisp vegetables and tender protein. A modern twist on a classic quick-dinner format.

- 1 lb chicken breast or extra-firm tofu, cubed
- 1/4 cup balsamic vinegar
- 2 tbsp honey or maple syrup
- 1 tbsp soy sauce
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 large carrot, thinly sliced
- Salt and black pepper to taste
Instructions
- Whisk together balsamic vinegar, honey, and soy sauce in a bowl until smooth.
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
- Add cubed chicken or tofu and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
- Add the remaining tablespoon of oil to the same pan and sauté garlic for 30 seconds.
- Add broccoli, bell pepper, and carrots; stir-fry for 5 minutes until crisp-tender.
- Return the protein to the pan and pour the balsamic glaze over everything.
- Toss constantly for 2-3 minutes until the glaze thickens and coats the ingredients glossy.
- Remove from heat and serve immediately over rice or quinoa.
