- 5 oz baby arugula
- 2 medium Granny Smith apples, thinly sliced
- 1/2 cup toasted walnuts or pecans
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 tablespoon fresh lemon juice
- 1/4 cup shaved Parmesan cheese
- Salt and black pepper to taste
Instructions
- In a small jar or bowl, whisk together olive oil, apple cider vinegar, maple syrup, and 1 tablespoon of lemon juice until emulsified.
- Slice apples into thin wedges and toss them with a small amount of lemon juice to prevent browning.
- Place walnuts in a dry skillet over medium heat and toast for 3-5 minutes until fragrant.
- Place arugula in a large bowl and drizzle with the vinaigrette, tossing gently to coat.
- Fold in the sliced apples and toasted walnuts.
- Top with shaved Parmesan cheese and season with salt and black pepper before serving.
