Description

A refreshing and sophisticated salad combining peppery arugula, tart apple slices, and toasted walnuts, all tossed in a zesty apple cider vinaigrette.


Ingredients

  • 5 oz baby arugula
  • 2 medium Granny Smith apples, thinly sliced
  • 1/2 cup toasted walnuts or pecans
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon fresh lemon juice
  • 1/4 cup shaved Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. In a small jar or bowl, whisk together olive oil, apple cider vinegar, maple syrup, and 1 tablespoon of lemon juice until emulsified.
  2. Slice apples into thin wedges and toss them with a small amount of lemon juice to prevent browning.
  3. Place walnuts in a dry skillet over medium heat and toast for 3-5 minutes until fragrant.
  4. Place arugula in a large bowl and drizzle with the vinaigrette, tossing gently to coat.
  5. Fold in the sliced apples and toasted walnuts.
  6. Top with shaved Parmesan cheese and season with salt and black pepper before serving.
