Ingredients

  • 2 cups apple cider (reduced to 2/3 cup)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Simmer apple cider in a saucepan until reduced to about 2/3 cup of syrup. Let cool.
  2. Mix cream cheese and powdered sugar; scoop into small balls and freeze for 30 minutes.
  3. Cream butter, brown sugar, and white sugar until light and fluffy.
  4. Beat in the egg and the cooled cider reduction.
  5. Whisk together flour, cinnamon, baking soda, and salt; fold into the wet ingredients.
  6. Flatten a tablespoon of dough, place a frozen cheese ball in the center, and seal.
  7. Bake at 350°F (175°C) for 10-12 minutes until edges are golden.
