Ingredients

  • 3 lbs Yukon Gold potatoes, peeled and cubed
  • 1/2 cup apple cider vinegar
  • 1/2 cup granulated sugar
  • 4 tbsp unsalted butter
  • 1/2 cup diced yellow onion
  • 1 cup diced celery
  • 3 hard-boiled eggs, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Place cubed potatoes in a large pot of salted water and boil until tender (about 15 minutes).
  2. Drain potatoes and let them steam-dry in a colander for 5 minutes.
  3. In a saucepan, combine sugar, apple cider vinegar, and butter over medium heat.
  4. Stir the dressing until smooth and bubbling, then add diced onion and celery; cook for 2 minutes.
  5. Pour the hot dressing over the warm potatoes and fold gently with a spatula.
  6. Fold in the chopped hard-boiled eggs, salt, and pepper until combined.
