- 3 lbs Yukon Gold potatoes, peeled and cubed
- 1/2 cup apple cider vinegar
- 1/2 cup granulated sugar
- 4 tbsp unsalted butter
- 1/2 cup diced yellow onion
- 1 cup diced celery
- 3 hard-boiled eggs, chopped
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Place cubed potatoes in a large pot of salted water and boil until tender (about 15 minutes).
- Drain potatoes and let them steam-dry in a colander for 5 minutes.
- In a saucepan, combine sugar, apple cider vinegar, and butter over medium heat.
- Stir the dressing until smooth and bubbling, then add diced onion and celery; cook for 2 minutes.
- Pour the hot dressing over the warm potatoes and fold gently with a spatula.
- Fold in the chopped hard-boiled eggs, salt, and pepper until combined.
