Description

A vibrant, chopped autumn salad featuring crisp Honeycrisp apples, salty feta, and crunchy toasted pecans tossed in a homemade maple cider vinaigrette.

Ingredients

Scale
  • 4 cups chopped kale or mixed greens
  • 2 Honeycrisp apples, diced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted pecans
  • 1/3 cup dried cranberries
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3-5 minutes until fragrant.
  2. Wash and chop the kale or mixed greens into bite-sized pieces.
  3. Dice the Honeycrisp apples into small, uniform cubes.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, salt, and pepper until emulsified.
  5. In a large mixing bowl, combine the greens, diced apples, dried cranberries, and toasted pecans.
  6. Pour the dressing over the salad and toss gently to coat all ingredients.
  7. Fold in the crumbled feta cheese carefully to avoid breaking the crumbles.
