Description

A satisfying blend of smoky BBQ glazed chicken and caramelized roasted sweet potatoes. This one-pan meal is nutrient-dense and perfect for healthy meal prep.


Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cubed
  • 2 large sweet potatoes, peeled and cubed into 1-inch pieces
  • 1/2 cup barbecue sauce
  • 3 tbsp olive oil, divided
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh cilantro or green onions for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with 2 tbsp olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on one side of the baking sheet.
  3. Pat chicken cubes dry and toss with 1 tbsp olive oil, salt, and pepper.
  4. Stir in the barbecue sauce until the chicken is evenly coated, then place on the other side of the baking sheet.
  5. Roast for 20-25 minutes, or until chicken reaches an internal temperature of 165°F and potatoes are tender.
  6. Optional: Brush additional BBQ sauce on the chicken and broil for 2-3 minutes for extra caramelization.
  7. Divide sweet potatoes into bowls, top with BBQ chicken, and garnish with cilantro or green onions.
