A satisfying blend of smoky BBQ glazed chicken and caramelized roasted sweet potatoes. This one-pan meal is nutrient-dense and perfect for healthy meal prep.

- 1.5 lbs boneless skinless chicken breasts, cubed
- 2 large sweet potatoes, peeled and cubed into 1-inch pieces
- 1/2 cup barbecue sauce
- 3 tbsp olive oil, divided
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp chopped fresh cilantro or green onions for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Toss cubed sweet potatoes with 2 tbsp olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on one side of the baking sheet.
- Pat chicken cubes dry and toss with 1 tbsp olive oil, salt, and pepper.
- Stir in the barbecue sauce until the chicken is evenly coated, then place on the other side of the baking sheet.
- Roast for 20-25 minutes, or until chicken reaches an internal temperature of 165°F and potatoes are tender.
- Optional: Brush additional BBQ sauce on the chicken and broil for 2-3 minutes for extra caramelization.
- Divide sweet potatoes into bowls, top with BBQ chicken, and garnish with cilantro or green onions.
