A savory and sweet stir fry featuring tender beef strips and deeply caramelized onions in a glossy soy glaze.

- 1 lb flank steak, sliced thinly against the grain
- 2 large yellow onions, thinly sliced
- 2 tbsp cornstarch
- 3 tbsp vegetable oil, divided
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Heat 1 tablespoon of oil in a large skillet over medium-low heat. Add sliced onions and salt, cooking for 15-20 minutes until golden brown and jammy.
- Remove onions from the pan and set them aside.
- Toss sliced beef with cornstarch and black pepper in a bowl until evenly coated.
- Increase pan heat to high and add 2 tablespoons of oil. Sear beef strips in batches for 2 minutes per side until browned. Remove beef from pan.
- Reduce heat to medium, add minced garlic, and sauté for 30-60 seconds until fragrant.
- Return the beef and caramelized onions to the pan. Pour in soy sauce and brown sugar.
- Stir constantly for 1-2 minutes until the sauce thickens into a glossy glaze.
- Remove from heat and stir in sesame oil before serving.
