Ingredients

  • 4 salmon fillets (6oz each)
  • 2 tbsp Cajun seasoning
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 large flour tortillas
  • 4 cups chopped romaine lettuce
  • 1/2 cup Caesar dressing
  • 1/4 cup shaved parmesan cheese
  • 2 lemons, cut into wedges

Instructions

  1. Pat salmon fillets dry and coat thoroughly with Cajun seasoning.
  2. Heat butter and olive oil in a cast-iron skillet over medium-high heat.
  3. Sear salmon for 3-4 minutes per side until a dark crust forms; remove and let rest for 5 minutes.
  4. Toss chopped romaine lettuce with Caesar dressing in a large bowl.
  5. Briefly warm tortillas in a pan or microwave to make them pliable.
  6. Place a handful of dressed lettuce in the center of each tortilla.
  7. Top with a salmon fillet and a squeeze of fresh lemon juice.
  8. Fold in the sides and roll tightly to assemble the wraps.
