Description
A handheld version of the classic Boston Cream Pie, featuring a soft vanilla cookie stuffed with pastry cream and topped with chocolate ganache.

- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup heavy cream (for filling and glaze)
- 2 tbsp cornstarch
- 1/4 cup sugar (for filling)
- 2 egg yolks
- 6 oz semi-sweet chocolate chips
Instructions
- Prepare pastry cream by heating 1 cup cream, sugar, and cornstarch until thickened; whisk in egg yolks and vanilla, then chill for 4 hours.
- Cream softened butter and sugar until fluffy.
- Beat in eggs and vanilla extract.
- Stir in flour, baking powder, and salt until just combined.
- Scoop 1 tbsp of dough, flatten, add 1 tsp of chilled filling, and seal the dough over the top.
- Bake at 350F (175C) for 10-12 minutes until edges are lightly golden.
- Cool cookies completely on a wire rack.
- Melt chocolate chips with 1/4 cup heavy cream to create ganache; pour over cooled cookies.
