Description

A handheld version of the classic Boston Cream Pie, featuring a soft vanilla cookie stuffed with pastry cream and topped with chocolate ganache.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup heavy cream (for filling and glaze)
  • 2 tbsp cornstarch
  • 1/4 cup sugar (for filling)
  • 2 egg yolks
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Prepare pastry cream by heating 1 cup cream, sugar, and cornstarch until thickened; whisk in egg yolks and vanilla, then chill for 4 hours.
  2. Cream softened butter and sugar until fluffy.
  3. Beat in eggs and vanilla extract.
  4. Stir in flour, baking powder, and salt until just combined.
  5. Scoop 1 tbsp of dough, flatten, add 1 tsp of chilled filling, and seal the dough over the top.
  6. Bake at 350F (175C) for 10-12 minutes until edges are lightly golden.
  7. Cool cookies completely on a wire rack.
  8. Melt chocolate chips with 1/4 cup heavy cream to create ganache; pour over cooled cookies.
