- 6 slices smoked bacon, diced
- 1 medium onion, finely diced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 cans (15oz) butter beans, drained and rinsed
- 4 cups vegetable or chicken broth
- 1 tsp fresh thyme leaves
- 1 bay leaf
- Salt and black pepper to taste
- 1 tbsp olive oil (optional)
Instructions
- Sear the diced bacon in a large pot over medium heat until crisp and golden.
- Add the onion, carrots, and celery to the bacon fat and sauté for 5-7 minutes.
- Stir in minced garlic and thyme, cooking for 1 minute until fragrant.
- Pour in a splash of broth and scrape the browned bits from the bottom of the pot.
- Add the drained butter beans, remaining broth, and the bay leaf.
- Simmer on low heat for 20 minutes.
- Remove the bay leaf and partially mash a portion of the beans with an immersion blender or fork for thickness.
- Season with salt and pepper and serve hot.
