Ingredients

  • 6 slices smoked bacon, diced
  • 1 medium onion, finely diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cans (15oz) butter beans, drained and rinsed
  • 4 cups vegetable or chicken broth
  • 1 tsp fresh thyme leaves
  • 1 bay leaf
  • Salt and black pepper to taste
  • 1 tbsp olive oil (optional)

Instructions

  1. Sear the diced bacon in a large pot over medium heat until crisp and golden.
  2. Add the onion, carrots, and celery to the bacon fat and sauté for 5-7 minutes.
  3. Stir in minced garlic and thyme, cooking for 1 minute until fragrant.
  4. Pour in a splash of broth and scrape the browned bits from the bottom of the pot.
  5. Add the drained butter beans, remaining broth, and the bay leaf.
  6. Simmer on low heat for 20 minutes.
  7. Remove the bay leaf and partially mash a portion of the beans with an immersion blender or fork for thickness.
  8. Season with salt and pepper and serve hot.
