Description

Ingredients

  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 medium red onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Combine sliced red onion, apple cider vinegar, sugar, and salt in a glass jar. Let sit for at least 30 minutes.
  2. Heat a non-stick skillet over medium heat and melt a small amount of butter.
  3. Place one tortilla in the skillet and cover the surface with a layer of Monterey Jack cheese.
  4. Fold the tortilla in half and press down with a spatula.
  5. Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is fully melted.
  6. Remove from heat, let rest for one minute, and slice into wedges.
  7. Top each wedge with pickled red onions and chopped fresh cilantro.
